Let’s make a basic cookie cake together from scratch! Here’s the recipe i use! 2 sticks softened unsalted butter 3/4 cup sugar 1 cup light brown sugar packed 2 eggs 2tsps vanilla extract 1 tsp sea salt 2 tsps baking soda 4 cups all purpose flour 2 cups semi sweet chocolate chips Cream softened butter, sugar, and brown sugar together in a kitchenaid stand mixer (or any Stand mixer!) or by hand. Add eggs and vanilla extract and mix until combined. Next add in sea salt, baking soda and flour. Mix this until just combined. Last add in your chocolate chips and mix until combined. Press into the bottom of a greased baking pan and place in a preheated oven (350 degrees) for 22 to 25 minutes! Add butter & oil; knead 4–5 min more until silky. ⏲️ Rise 1–1½ hours until doubled. 🥖 Divide into 30 rolls (38–40 g / 1.3 oz each) and shape. 🧺 Rise 30–45 min. Brush with egg wash (1 egg + 1 tsp water). 🔥 Bake at 350°F (175°C) for 18–20 min on the middle rack. Brush with butter while warm.
